boozy cupcakes

For the Cupcakes
  • 1/2 cup Guinness (the only stout beer we get here is haywards black...and no surprises madras dint even have that, so i just used the strongest beer i could get my hands on kingfisher black or something like that)
  • 1/2 cup butter (melted)
  • 1/4 cocoa powder
  • 1 cup flour
  • 1 cup sugar
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1/4 sour cream

For the Ganache
  • 3 1/2 oz bittersweet chocolate
  • 1/3 cup heavy cream
  • 1 tablespoon butter
  • 1 teaspoon whiskey (I used a little more)
  • 1/2 teaspoon vanilla extract

For the Frosting
  • 1 1/2 cup powdered sugar (powder very finely or just use store bought

  • icing sugar)
  • 1/2 cup butter (room temperature)
  • 2 tablespoons Baileys (i used brandy - do not ever do this)

The cake is marvelously moist, really its melt in your mouth amazing and it rose to form beautiful cupcakey peaks, I was quite thrilled by that. The ganache tastes wonderful, the whiskey works beautifully with chocolate, I should have let mine thicken up a bit more, but even runny its a lovely surprise in the centre of the cupcake.

the frosting however wasn't most awesome, mainly because I used brandy and then added vanilla essence in the hope it would save the flavour, it isn't horrendous, but it isn't that perfect finish to the cupcake that your hoping for. try it with baileys and icing sugar and it will yield a way better result.
